Cucumber Gazpacho
Put in blender or food processor:
2 cloves garlic (pressed)
1/2 tsp salt or more taste/ a bit of pepper
4 LARGE cukes
2 cans chicken broth
6 TBL lime juice (the recipe called for white vinegar)
3 TBL fresh cilantro
2 stalks scallions (optional or add before serving)
Stir in:
8 ounces sour cream and 16 ounces yogurt
6-10 drops tabasco
Chill at least 2 hours.
Optional. Chop tomatoes, red/green peppers and add to bowl before serving.
