Cucumber Gazpacho

Put in blender or food processor:
  • 2 cloves garlic (pressed)
  • 1/2 tsp salt or more taste/ a bit of pepper
  • 4 LARGE cukes
  • 2 cans chicken broth
  • 6 TBL lime juice (the recipe called for white vinegar)
  • 3 TBL fresh cilantro
  • 2 stalks scallions (optional or add before serving)
Stir in:
  • 8 ounces sour cream and 16 ounces yogurt
  • 6-10 drops tabasco
Chill at least 2 hours.
Optional. Chop tomatoes, red/green peppers and add to bowl before serving.
